Apple Crumb Pie with Maple Glaze


As I'm sure you already know about me, baking has always been a passion of mine. It's not because I enjoy making a mess of my kitchen, or even because I love eating the delicious creations at the end...


I've realized the true reason why it has become such a big part of me and why I get so much happiness from it. It's my way of showing kindness to someone. There is no better feeling than putting a lot of work and effort into something for someone else, and watching the expression on their face when you hand over that special something. Whether it be bringing a nice dessert to someone's house when you've been invited for dinner, or simply knowing how much this loved one adores chocolate - so you put together something for them that you know they'll go crazy for. I love seeing the reactions! That is truly the reward for me. It lets that person know that you were thinking of them. I love how excited people get and how appreciative they are when I make something for them. It could be as simple as bringing a pot of homemade soup to someone when they're sick, or even bringing a meal to a family during a difficult time. I look at it as I've taken something that I enjoy doing so very much and turned it into something for others, not only for me.  Each one of us has at least one...if not more...special talents in our lives - why not use those talents that God has given us to do good for others?


 As the famous saying goes, the best gifts come from the heart, not the wallet...

One act of random kindness can surely make a difference in someones day!
Mine was this Maple Apple Crumb Pie. If you know someone that loves apple pie - why not make them one and pass it on? If baking isn't one of your strong points, then what is?

Ingredients:

1 and 1/4 cups of flour, plus more for rolling
6 Tbsp of unsalted butter - room temperature
1/3 cup of packed brown sugar
3/4 tsp of salt
2 pre-made 9'' pie crusts, thawed (of course you could always use homemade pie crust.)
2 Tbsp of lemon juice
about 6 large granny smith apples
1 cup of sugar
3/4 cup of chopped walnuts (optional)

For Maple Glaze:

1/3 cup of powdered sugar
2 Tbsp of maple syrup


1. Preheat your oven to 375 degrees. Place lemon juice in a large bowl. Peel, core, and slice your apples as big or as small as you'd like them, placing them in the bowl as you go. Toss the apples with lemon juice to keep them from turning brown. Take a medium bowl. Combine 1 cup of flour, butter, brown sugar, and 1/4 tsp of salt to make crumb topping. Work with fingers until clumps form, then put in freezer.



2. Add granulated sugar, remaining 1/4 cup of flour, remaining 1/2 tsp of salt to the apple mixture and mix. (and walnuts if desired)



3. Lightly grease a 9-inch pie tin.


4. On s lightly floured surface gently roll the 2 pre-made, thawed pie crusts to form a 14" circle. Place the pie crust gently into the pie tin, letting the extra 2" hang over the edge. Refrigerate.


5. Spoon the apple mixture into the pie crust and press firmly. Fold the overhanging dough over the pie filling and press the edges tightly around the pie. 


6. Bake pie for 45 minutes and then remove from the oven and add the crumb topping. At this point lightly wrap the edges of the pie with aluminum foil to avoid burning. Return pie to the oven and bake for another 20 minutes. 






7. While the pie is cooling, mix the powdered sugar and maple syrup together to make a maple glaze. Drizzle the glaze over warm pie and serve with vanilla ice cream.
