These Roasted Garlic Mashed Potatoes are absolutely amazing! We couldn't believe how good they turned out! They are not your standard everyday mashed potatoes I can promise you that! They have an unbelievable amount of flavor and go great as a side dish with pretty much anything.
So if you'd like to give these a try here are the few ingredients you'll need:
6 Yellow flesh potatoes
1 medium sized head of garlic
3/4 cup of heavy cream
6 Tbsp unsalted butter
1 Tbsp olive oil
4 Tbsp of Herb and Garlic cream cheese (optional)
Salt and pepper to taste
1. Preheat your oven to 400 degrees. Slice the top of the garlic head off and drizzle with olive oil. Wrap in aluminum foil and cook in oven for 45-50 minutes.
(When your garlic is cooked it should look something like this.)
2. When the garlic is done roasting, set it aside and let it cool. Once the garlic is cool enough to handle, pop out the cloves with a knife or fork and put onto a plate or bowl. Mash the garlic with a fork.
3. Peel your potatoes and cut them into chunks. Boil them until tender, drain and set aside.
4. In a small saucepan, warm up the cream, butter, and cream cheese just until melted.
5. Add it to the mashed potatoes and mix.
6. Add the garlic to the mashed potatoes and mix until well combined. Season with salt and pepper.
I topped ours with some crispy french fried onions - you can do this as well or just leave them as is:) Enjoy!
